- Beat egg whites until stiff; add 1 cup sugar, cream of tartar, and vanilla, and beat until smooth.
- Fold in chopped pecans and finely crumbled soda crackers.
- Pour the mixture into a well-greased pie pan.
- Bake at 300°F (150°C) for 35 minutes.
- Allow the pie to cool.
- Beat 1 cup of whipping cream, adding 1/2 cup of sugar until stiff.
- Remove from mixer and stir in 2 or 3 tablespoons of crushed pineapple.
- Spread the whipped cream mixture over the cooled crust.
- Sprinkle with coconut.
- Refrigerate the pie, preferably made the day before serving.
