Ingredients

  • 3 egg whites
  • 1/2 tsp cream of tartar
  • 1 cup sugar
  • 1/2 tsp vanilla
  • 16 soda crackers, crumbled finely
  • 1 cup chopped pecans
  • 1 cup whipping cream
  • 1/2 cup sugar

Instructions

  1. Beat egg whites until stiff; add 1 cup sugar, cream of tartar, and vanilla, and beat until smooth.
  2. Fold in chopped pecans and finely crumbled soda crackers.
  3. Pour the mixture into a well-greased pie pan.
  4. Bake at 300°F (150°C) for 35 minutes.
  5. Allow the pie to cool.
  6. Beat 1 cup of whipping cream, adding 1/2 cup of sugar until stiff.
  7. Remove from mixer and stir in 2 or 3 tablespoons of crushed pineapple.
  8. Spread the whipped cream mixture over the cooled crust.
  9. Sprinkle with coconut.
  10. Refrigerate the pie, preferably made the day before serving.
