Ingredients

  • 2 lb. scallops
  • freshly ground black pepper
  • 3 Tbsp. olive oil
  • 2 Tbsp. finely chopped garlic
  • 1/2 c. finely diced sun-dried tomatoes in oil
  • 2 c. crushed Premium saltine crackers
  • juice of 1 lemon
  • 3 Tbsp. chopped parsley
  • 2 Tbsp. unsalted butter

Instructions

  1. Dry scallops with paper towels.
  2. Season scallops with freshly ground black pepper.
  3. Heat olive oil in a large skillet over medium-high heat until very hot.
  4. Add scallops to the skillet, then add garlic and cook briefly.
  5. Immediately add sun-dried tomatoes and toss to combine.
  6. Add crushed crackers, lemon juice, chopped parsley, and butter to the skillet.
  7. Cook and stir until scallops are cooked through and crackers are browned.
  8. Garnish with remaining chopped parsley before serving.
