Ingredients

  • 3 egg whites
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 20 Ritz crackers, finely crushed
  • 1 cup chopped nuts
  • 8 cherries, cut up
  • Ice cream or whipped cream

Instructions

  1. Beat egg whites until stiff; gradually beat in sugar.
  2. Fold in baking powder and vanilla.
  3. Fold in crushed Ritz crackers, chopped nuts, and chopped cherries.
  4. Place the mixture in a greased 9-inch pie pan.
  5. Bake at 350°F (175°C) for 20 to 25 minutes.
  6. Top with sweetened whipped cream and chill for at least 3 hours, or omit whipped cream and top with vanilla ice cream.
