Ingredients

  • 2 c. flour
  • 1 1/4 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 c. vegetable oil
  • 3 eggs
  • 2 tsp. vanilla
  • 2 c. shredded carrots
  • 1/4 c. raisins
  • 1 c. cranberries
  • 1/2 c. chopped pecans
  • 1/2 c. shredded coconut
  • 1 c. finely chopped apples

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine flour, sugar, baking soda, cinnamon, and salt in a large bowl.
  3. Add shredded carrots, raisins, cranberries, chopped pecans, shredded coconut, and chopped apples to the dry ingredients.
  4. Mix well to evenly distribute the ingredients.
  5. In a separate bowl, beat the eggs and then add vegetable oil and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Divide the batter evenly among muffin tins lined with paper liners.
  8. Bake for approximately 20 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow muffins to cool slightly before removing from the tin and serving.
