Cranberried Sweet Potatoes

Sweet potatoes filled with a tangy cranberry, raisin, apple, and walnut stuffing, then baked to a glaze; a festive, flavorful side perfect for holiday dinners.

Ingredients

  • 2 c. Fresh Cranberries
  • 1/2 c. Raisins
  • 1/2 c. Walnuts
  • 1 Tart Apple
  • 1/2 c. Brown Sugar
  • 6-8 Sweet Potatoes

Instructions

  1. Combine all ingredients except the sweet potatoes and mix well.
  2. Cut sweet potatoes in half and remove several tablespoons of pulp from the center of each half.
  3. Fill the hollowed sweet potatoes with the cranberry mixture.
  4. Sprinkle additional brown sugar over the filled potatoes for a shiny glaze.
  5. Place the potatoes under the broiler until hot and bubbling.
  6. Serve immediately.
