Ingredients

  • 2 c. flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 1/4 c. shortening
  • 3/4 c. orange juice
  • 1 Tbsp. orange rind
  • 1 egg
  • 1/2 c. chopped nuts
  • 1 c. fresh cranberries

Instructions

  1. Mix dry ingredients and cut in shortening.
  2. Combine orange juice, orange rind, and beaten egg.
  3. Pour the wet mixture into the dry ingredients all at once, mixing just enough to dampen.
  4. Fold in chopped nuts and cranberries.
  5. Pour the batter into a greased and floured 9 x 5 x 3-inch bread pan.
  6. Bake at 350°F for 1 hour or until a toothpick comes out clean.
