Cranberry Chiffon Pudding

Ingredients

  • 15 or 16 oz. can jellied cranberry sauce
  • 3 oz. package orange flavored gelatin dessert
  • 1 Tbsp. lemon juice
  • 1 tsp. grated lemon rind
  • 1 egg white
  • 1 cup whipping cream
  • additional whipped cream

Instructions

  1. Heat the cranberry sauce to boiling, stirring constantly.
  2. Add the orange flavored gelatin dessert and stir until dissolved.
  3. Add lemon juice and grated lemon rind, then place over a bowl with ice to cool and thicken.
  4. Whip the cream until fluffy.
  5. Fold in the whipped egg white and whipped cream.
  6. Turn the mixture into individual dessert dishes.
  7. Cover and chill for about 4 hours until set.
  8. Serve garnished with additional whipped cream.
