Ingredients

  • 4 c. all-purpose flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. buttermilk
  • 3/4 c. vegetable oil
  • 3 eggs
  • 2 tsp. grated orange rind
  • 2 c. fresh or frozen cranberries
  • 1 c. chopped dates
  • 1 c. chopped walnuts
  • 1/2 c. sugar

Instructions

  1. Preheat oven and prepare a loaf pan.
  2. Combine flour, sugar, baking powder, baking soda, and salt in a bowl.
  3. In a separate bowl, mix buttermilk, vegetable oil, beaten eggs, and grated orange rind.
  4. Add the wet ingredients to the dry ingredients and beat until smooth.
  5. Fold in cranberries, chopped dates, and chopped walnuts.
  6. Pour the batter into the prepared loaf pan.
  7. Bake until a toothpick inserted into the center comes out clean.
  8. Allow to cool before removing from pan and serving.
