Ingredients

  • 1 1/4 cup sugar
  • 1/4 cup butter or margarine
  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 2 cups fresh or frozen cranberries, coarsely chopped

Instructions

  1. Preheat oven to 400°F.
  2. Cream together sugar and butter.
  3. Add eggs, one at a time, beating after each addition.
  4. In a bowl, sift together flour, baking powder, and salt.
  5. Add the dry ingredients and milk to the sugar and butter mixture.
  6. Stir by hand just to moisten ingredients. Stir in cranberries.
  7. Spoon into 18 muffin cups, filling 3/4 full.
  8. Bake for 25 to 30 minutes.
