Ingredients

  • 1/4 cup softened butter
  • 1 1/4 cups sugar
  • 2 eggs
  • 1/2 cup milk
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups fresh cranberries, coarsely chopped

Instructions

  1. Cream the softened butter; add sugar and cream again until well combined.
  2. Beat in eggs, one at a time, mixing well after each addition.
  3. Sift together the dry ingredients: flour, baking powder, and salt.
  4. Alternately add the dry ingredients and milk to the creamed mixture, beginning and ending with dry ingredients.
  5. Stir in the coarsely chopped cranberries.
  6. Fill twelve greased muffin cups two-thirds full with batter.
  7. Bake at 350°F (175°C) for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
