Ingredients

  • 1 cup fresh or frozen cranberries, chopped
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1 tablespoon grated orange peel
  • 2 cups flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 tablespoons shortening (margarine or butter)
  • 3/4 cup orange juice

Instructions

  1. Prepare cranberries, nuts, and orange peel.
  2. Mix together the prepared cranberries, nuts, and orange peel.
  3. In another bowl, mix together flour, sugar, baking powder, salt, and baking soda.
  4. Cut in the shortening until the mixture resembles coarse crumbs.
  5. Stir in orange juice and egg to moisten the batter.
  6. Fold in the cranberry mixture.
  7. Spoon the batter into a greased and floured loaf pan.
  8. Bake at 350°F (175°C) for 60 minutes.
  9. Cool on a rack for 15 minutes.
  10. Remove from pan and cool completely.
