Ingredients

  • 2 cups fresh cranberries
  • 1/4 cup sugar
  • 1/2 cup chopped pecans
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 1/4 cup solid vegetable shortening, melted

Instructions

  1. In a 10-inch pie plate, spread cranberries.
  2. Sprinkle with 1/4 cup sugar and chopped pecans; set aside.
  3. In a bowl, beat eggs with an electric mixer.
  4. Gradually add the remaining 1 cup of sugar and beat well.
  5. Add melted butter, melted shortening, and flour alternately to the egg mixture, mixing well after each addition.
  6. Pour the egg mixture over the cranberries in the pie plate.
  7. Bake about 60 minutes or until golden brown.
