Ingredients

  • 1.5 cups crawfish tails
  • 5 medium onions
  • 3 stalks celery
  • 4 medium bell peppers
  • 4 cloves garlic
  • 6 slices stale bread
  • cooking oil
  • black pepper
  • red pepper
  • salt

Instructions

  1. Combine minced onions, celery, bell peppers, and garlic in a pot and brown well in enough cooking oil to barely cover.
  2. Pour off excess oil when vegetables are browned, then grind the crawfish tails.
  3. Soak the stale bread in water and wring out the water.
  4. Add the ground crawfish tails to the vegetables and mix well.
  5. Add the soaked bread to the mixture to thicken the bisque.
  6. Season with black pepper, red pepper, and salt to taste.
  7. Simmer the bisque for additional flavor development before serving.
