Ingredients

  • 3 Tbsp butter
  • 2 Tbsp chopped onions
  • 1.5 lb crabmeat
  • 0.5 lb fresh mushrooms
  • 2 c light fish stock
  • 3 Tbsp flour
  • 1 Tbsp chopped parsley
  • 0.5 c grated Gruyere cheese
  • paprika
  • lemon juice
  • salt and pepper

Instructions

  1. Melt 1 tablespoon of butter in a saucepan.
  2. Add chopped onions and cover, cooking over low heat for 3 minutes.
  3. Add crabmeat and sliced mushrooms, season to taste.
  4. Cover and cook for 2 to 3 minutes.
  5. Add hot fish stock and cook for another 2 to 3 minutes.
  6. Remove crabmeat and mushrooms and set aside.
  7. Reserve the cooking liquid for later use.
