Ingredients

  • 6 medium summer squash
  • 2 eggs
  • 1/2 cup green onions, chopped
  • 1/3 cup celery, chopped
  • 2 tablespoons butter
  • 1 cup peeled crawfish tails
  • 1/2 cup milk
  • about 1 cup breadcrumbs

Instructions

  1. Boil squash in unsalted water until tender.
  2. Drain and mash well.
  3. Add eggs and mix well.
  4. Saute green onions and celery in butter until soft.
  5. Add milk, crawfish tails, and breadcrumbs to the vegetable mixture and mix well.
  6. Season with salt and pepper.
  7. Put the mixture in a casserole dish.
  8. Sprinkle the top with breadcrumbs.
  9. Bake at 350 degrees Fahrenheit until browned.
