Ingredients

  • 1 cup oil
  • 1 cup flour
  • 2 tablespoons tomato paste
  • 6 large onions, chopped
  • 8 ribs celery, chopped
  • 2 bell peppers, chopped
  • 6 pods garlic, chopped
  • 1 pound crayfish tail, ground
  • salt to taste
  • red pepper to taste

Instructions

  1. Brown the roux until very dark brown.
  2. Add all other ingredients and 2 quarts of water.
  3. Bring to a boil and simmer slowly for 40 minutes.
  4. Drop in a few slices of lemon before serving.
