Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 4 tablespoons butter
  • 2 eggs
  • 1/2 cup whipping cream
  • 3/4 to 1 cup butterscotch morsels

Instructions

  1. Preheat oven to 425°F.
  2. Lightly butter a cookie sheet.
  3. Mix flour, baking powder, sugar, and salt in a large bowl.
  4. Work in the butter with your fingers or a pastry blender until the mixture resembles coarse meal.
  5. Add the beaten eggs, vanilla, and whipping cream. Stir until blended.
  6. Turn out onto a lightly floured board and knead for a minute.
  7. Pat or roll the dough about 3/4-inch thick.
  8. Cut into wedges.
  9. Place on the prepared cookie sheet and bake for about 15 minutes.
