Ingredients

  • 1 large onion
  • 1 1/2 tsp butter
  • 4 cups chopped chicken
  • 1 10 oz can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup chopped pimiento
  • 1 cup mild cheddar cheese

Instructions

  1. Preheat oven to 350°F and grease an 11x7-inch dish.
  2. Sauté butter and chopped onion in a skillet until translucent.
  3. Combine cooked onions, chopped chicken, cream of chicken soup, sour cream, milk, and chopped pimiento in a bowl; mix well.
  4. Spoon the mixture into the prepared dish.
  5. Bake for 15 minutes.
  6. Sprinkle with 3/4 cup of shredded cheddar cheese.
  7. Arrange biscuits on top of the cheese layer.
  8. Sprinkle the remaining cheese over the biscuits and continue baking until biscuits are golden and cheese is melted.
