Tips & Substitutions

For a smoother texture, blend the soup after adding the peanut butter and cream. If you need a lighter version, consider using reduced-fat cream or substituting some of the peanut butter with tahini. Fresh herbs like cilantro can add a nice touch to the final dish. If you're looking for more hearty options, serve alongside Chicken Livers Smothered In Onions for a filling meal.

Serving Suggestions

Serve the soup hot, garnished with chopped peanuts or fresh herbs for added flavor and texture. It pairs beautifully with crusty bread or a fresh salad. Consider serving it as a starter before a main dish like Herbed Chicken And Broccoli, or alongside a light side like Corn Rice Casserole(Club Member: Jason Harvey) to create a balanced meal.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm the soup on the stove over low heat, stirring frequently to prevent sticking. If the soup thickens, add a little chicken stock or cream to reach your desired consistency before serving.

Frequently Asked Questions

Can I make this soup vegan?

Yes, to make a vegan version of Cream Of Peanut Soup, use vegetable stock instead of chicken stock and substitute coconut cream or a plant-based cream for the dairy. You can also opt for a nut butter that doesn't contain added sugars or oils to keep it healthier.

How can I adjust the thickness of the soup?

If you find the soup too thick, add more chicken stock or cream to thin it out to your preferred consistency. Conversely, if it's too thin, you can mix a little cornstarch with cold water and stir it into the soup while it's simmering to thicken it up.

What can I use instead of peanut butter?

If you're allergic to peanuts or prefer a different flavor, you can substitute almond butter or sunflower seed butter for the peanut butter. Just keep in mind that this will alter the flavor profile slightly, but it will still create a deliciously creamy soup.
