  • 2 chicken bouillon cubes
  • 1 Tbsp. Mrs. Dash
  • 1 pkg. frozen mixed vegetables
  • 1 small onion, chopped
  • 2 stalks celery, chopped
  • 1 large or 2 small potatoes, chopped or cubed
  • 1 can cream of chicken soup

Instructions

  1. Cook the whole chicken in 5 cups boiling water for 15 to 20 minutes until done.
  2. Remove the meat from the bones and set aside to cool.
  3. Skim fat from the cooled broth.
  4. Heat the broth and add chicken bouillon cubes, Mrs. Dash, frozen mixed vegetables, chopped onion, chopped celery, and chopped potatoes.
  5. Cook until vegetables are tender, about 25 to 30 minutes.
  6. Add the can of cream of chicken soup, water if needed, and the chopped chicken pieces.
  7. Heat thoroughly and serve.

Tips & Substitutions

For a richer flavor, consider adding a splash of white wine or fresh herbs like thyme or rosemary while cooking the broth. If fresh vegetables are available, you can substitute the frozen mixed vegetables. To save time, use rotisserie chicken instead of boiling a whole chicken. This recipe also works well with leftover chicken from the Gloria Brown Chicken Recipe.

Serving Suggestions

Serve this comforting soup with crusty bread or a side salad for a complete meal. It pairs beautifully with A Feed The Crowd Casserole for a family gathering. Garnish with fresh parsley or croutons for added texture. A sprinkle of grated cheese can also enhance the flavors.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, gently warm on the stovetop over medium heat, adding a splash of water or broth to maintain the desired consistency. You can also microwave it in short intervals, stirring in between, until heated through.
