  • 1 large Idaho Russet potato, peeled and chopped

  • 1 qt. flavored chicken stock
  • 1 c. heavy whipping cream
  • salt and white pepper to taste

Instructions

  1. In a heavy bottomed Dutch oven over medium-low heat, melt the butter.
  2. Stir in the chopped onions.
  3. Cook until onions are transparent.
  4. Add the chopped potato, watercress, and chicken stock.
  5. Bring to a boil.
  6. Reduce heat and simmer until the potato is soft and watercress is wilted.
  7. Cool the mixture slightly.
  8. Pour into a blender and blend on high until completely pureed.
  9. Pour the pureed mixture through a sieve into a bowl, pushing solids with the back of a wooden spoon.
  10. Rinse and dry the Dutch oven.
  11. Pour the sieved mixture back into the Dutch oven.
  12. Stir in the heavy cream, salt, and white pepper.
  13. Warm through and serve.
