Coronation Chicken

- Skin the chicken, cook, remove bones, and cube the meat. Allow to cool.
- Peel and finely chop the onion.
- Heat the cooking oil until soft, then add the chopped onion and cook until translucent.
- Add mango chutney, chicken stock, tomato puree, curry powder, and lemon juice to the onion mixture.
- Mix well and simmer, uncovered, for about 10 minutes until the mixture reduces. Let it cool.
- Mix mayonnaise and fresh cream together in a bowl.
- Once the sauce has cooled, combine it with the mayonnaise and cream mixture.
- Roast the flaked almonds under a grill until brown.
- Mix three-quarters of the toasted almonds into the cooled sauce and chicken.
- Sprinkle the remaining almonds over the top before serving.
