Ingredients

  • 1 medium to large chicken
  • 1 onion
  • 1 Tbsp sunflower oil
  • 2 Tbsp mango chutney
  • 1/4 pt chicken stock
  • 1 Tbsp tomato puree
  • 1 Tbsp curry powder
  • 1 1/2 Tbsp lemon juice
  • 1/4 pt mayonnaise
  • 1/4 pt fresh cream
  • 1/2 pkg flaked almonds

Instructions

  1. Skin the chicken, cook, remove bones, and cube the meat. Allow to cool.
  2. Peel and finely chop the onion.
  3. Heat the cooking oil until soft, then add the chopped onion and cook until translucent.
  4. Add mango chutney, chicken stock, tomato puree, curry powder, and lemon juice to the onion mixture.
  5. Mix well and simmer, uncovered, for about 10 minutes until the mixture reduces. Let it cool.
  6. Mix mayonnaise and fresh cream together in a bowl.
  7. Once the sauce has cooled, combine it with the mayonnaise and cream mixture.
  8. Roast the flaked almonds under a grill until brown.
  9. Mix three-quarters of the toasted almonds into the cooled sauce and chicken.
  10. Sprinkle the remaining almonds over the top before serving.
