Ingredients

  • 1/4 cup margarine
  • 1/2 cup boiling water
  • 1/2 cup sifted flour
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/4 cup finely grated Cheddar cheese
  • 2 1/2 cups tuna, shrimp, chicken or ham salad

Instructions

  1. Place margarine and water in a saucepan.
  2. Heat over high heat until margarine is melted.
  3. Reduce heat to low.
  4. Add flour and salt all at once, stirring vigorously with a spoon until mixture forms a ball.
  5. Remove from heat.
  6. Quickly beat in 1 egg and cheese until mixture is smooth.
  7. Add the second egg and beat well.
  8. Drop heaping teaspoonfuls of batter onto a lightly greased baking sheet.
  9. Bake at 450°F (232°C) for 12 to 15 minutes; cool.
  10. Cut each puff in half, fill with about a teaspoon of salad filling.
