Ingredients

  • 1/2 cup boiling water
  • 1/4 cup shortening
  • 1/8 teaspoon salt
  • 1/2 cup flour
  • 2 eggs

Instructions

  1. Preheat oven to 400°.
  2. In a saucepan, combine the boiling water, shortening, and salt until melted. Add flour and stir constantly until the mixture leaves the side of the pan and forms a ball. Remove from heat and cool for a few minutes.
  3. Beat in eggs, one at a time, until the mixture is smooth and velvety.
  4. Spread the batter in a greased 9-inch glass pie pan, ensuring to grease the sides but not spreading the batter on them.
  5. Bake for 20 to 25 minutes at 400°, then reduce the temperature to 350° and bake until done, about 35 to 40 minutes.
  6. Cool away from any draft.
