Ingredients

  • 4 eggs
  • 1 cup cooking oil
  • 2 cups pumpkin
  • 2/3 cup cold water
  • 3 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3 cups sugar
  • raisins (optional)

Instructions

  1. Beat together the eggs, cooking oil, pumpkin, and cold water.
  2. Sift together the flour, baking soda, salt, cinnamon, nutmeg, and sugar.
  3. Combine all ingredients and mix well. Optionally add raisins and nuts.
  4. Pour the batter into a greased loaf pan.
  5. Bake at 350°F for 1 hour and 15 minutes.
  6. Let cool and store in the refrigerator.
