Ingredients

  • 2 cans cream of mushroom soup
  • 1 cup tiny button mushrooms
  • 1 large can evaporated milk

  • 4 packages frozen chicken breasts
  • vegetable oil

  1. Combine all ingredients except chicken breasts and oil; heat until cheese melts, stirring constantly.
  2. Remove skin and bones from partially frozen chicken breasts.
  3. Cut meat into cube pieces; allow to completely thaw and drain.
  4. Heat vegetable oil in a hot cast-iron skillet until hot.
  5. Cook chicken pieces in the skillet, stirring constantly, until done. Season with salt and pepper while frying.
  6. Allow oil to drain before adding cooked chicken to the sauce.
  7. Add chicken to the sauce in batches, only putting enough to cover the bottom of the skillet each time.
