Ingredients

  • 3 squirrels, cut up
  • seasoned flour
  • 1/4 cup cooking oil
  • 1 onion, chopped
  • 1/2 cup mushrooms
  • 1 cup dry white wine
  • 1/2 teaspoon thyme
  • 1 tablespoon parsley
  • 1 cup light cream

Instructions

  1. Roll squirrel pieces in seasoned flour.
  2. Heat oil in a frying pan and brown the squirrel pieces.
  3. Remove squirrel from the pan and set aside.
  4. Add chopped onion and mushrooms to the pan and fry for 5 minutes.
  5. Return squirrel to the pan, add white wine, thyme, and parsley.
  6. Mix well, cover, and simmer for 1 to 1½ hours.
  7. Remove squirrel from the pan and let it cool.
  8. Add enough water to the pan to make 1 cup of liquid.
  9. Add light cream to the liquid in the pan.
  10. Bring the mixture to a boil and thicken with flour.
  11. Return meat to the sauce and simmer briefly before serving.
