Ingredients

  • 1 qt. broth or combination of broth and milk
  • 1/2 cup butter
  • 2 cups diced turkey or chicken
  • 1 can cream of mushroom soup
  • 1 cup chopped pimento
  • 1/2 cup flour
  • 1 small onion, chopped fine
  • salt to taste
  • pepper to taste

Instructions

  1. Melt butter in a large saucepan and stir in flour until smooth.
  2. Gradually add hot broth, stirring constantly until the mixture thickens.
  3. Stir in diced turkey, cream of mushroom soup, chopped pimento, and finely chopped onion; season with salt and pepper to taste.
  4. Pour the mixture into a flat casserole dish.
  5. Cut biscuits into small circles and place them on top of the casserole.
  6. Bake for 10 to 12 minutes at 450°F until the biscuits are golden brown.
