Ingredients

  • 1/4 cup Blue Bonnet margarine
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 2 eggs
  • 17 oz. can cream-style corn
  • 25 vanilla wafers, finely rolled
  • 2 teaspoons diced pimentos
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

Instructions

  1. In a small skillet, over medium heat, melt 2 teaspoons of margarine.
  2. Add chopped onion and green pepper and sauté until tender.
  3. In a medium bowl, combine eggs, cream-style corn, 1/3 cup vanilla wafer crumbs, salt, black pepper, and diced pimentos.
  4. Add the sautéed vegetables to the mixture and stir well.
  5. Pour the mixture into a 1-quart casserole dish.
  6. Set the dish in a shallow pan of hot water and bake in a preheated oven at 350°F for 40 minutes.
  7. Meanwhile, melt the remaining margarine and mix in the remaining wafer crumbs.
  8. Remove the casserole from the oven, sprinkle the wafer crumb mixture over the top, and bake for an additional 5 minutes or until done.
