Cinnamon Diamonds are sweet, nutty cookies with a hint of cinnamon, perfect for holiday gatherings or as a delightful treat with coffee or tea.

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 egg white, beaten
  • 3/4 cup chopped walnuts

Instructions

  1. Cream butter and brown sugar; beat in egg yolk and vanilla.
  2. Stir together flour and cinnamon.
  3. Add dry ingredients to the creamed mixture and mix well.
  4. Pat the dough into an ungreased baking pan.
  5. Brush the top with beaten egg white.
  6. Sprinkle with chopped walnuts and lightly press them into the surface.
  7. Bake at 350°F (175°C) for 18 to 20 minutes.
  8. Cut into diamond shapes while warm.
