Creamy, cheesy enchiladas filled with seasoned ground beef and vegetables, topped with melted Velveeta sauce. Perfect for comforting family dinners or casual gatherings.

Ingredients

  • 1 1/2 lb. ground beef
  • 1 large green pepper, chopped
  • 1 large onion, chopped
  • 1 can Ro-Tel green chilies and peppers
  • 1 lb. Velveeta cheese
  • 1 (12 oz.) can Pet milk
  • 1 (8 oz.) can tomato sauce
  • 8 to 12 flour tortillas

Instructions

  1. Brown the ground beef in a skillet.
  2. Add chopped green pepper and onion to the beef and cook until vegetables are tender.
  3. Drain excess grease from the meat.
  4. Add Ro-Tel green chilies and tomato sauce to the meat mixture and simmer.
  5. Cut Velveeta cheese into chunks and melt with Pet milk until smooth.
  6. Roll the beef mixture in flour tortillas and secure with toothpicks.
  7. Place the rolled tortillas in a baking dish and pour the cheese mixture over the top.
  8. Bake at 350°F for 10 minutes until hot and bubbly.
