Ingredients

  • 1 lb. ground beef
  • 1 chopped onion
  • 17 oz. whole kernel corn (undrained)
  • 16 oz. stewed tomatoes (undrained)
  • 1 c. sour cream
  • 1 c. cornmeal
  • 1 can ripe olives, quartered
  • 1 Tbsp. chili powder
  • 1/2 tsp. cumin
  • 2 c. cheese (Mozzarella or Monterey Jack)

Instructions

  1. Brown the ground beef in a skillet.
  2. Add chopped onion to the beef and cook until translucent.
  3. Drain excess fat from the meat mixture.
  4. In a bowl, combine corn, stewed tomatoes, sour cream, cornmeal, quartered olives, chili powder, and cumin.
  5. Mix well and then add the cooked beef mixture, stirring to combine.
  6. Reduce heat to low, sprinkle cheese over the mixture, cover, and simmer for 20 minutes.
  7. Serve hot with salsa.
