Instructions

  1. Melt 1 tablespoon butter in a large saucepan over medium heat. Add mushrooms and cook until tender, stirring constantly.
  2. Remove mushrooms from the saucepan and set aside.
  3. Melt 1/3 cup margarine in the same saucepan over low heat.
  4. Add flour and stir until smooth.
  5. Cook for 1 minute, stirring constantly.
  6. Gradually add 2 1/2 cups of milk, stirring constantly.
  7. Cook over medium heat until thickened and bubbly.
  8. Stir in whipping cream, salt, black pepper, nutmeg, and red pepper.
  9. Cook, stirring constantly, until cheese melts and mixture is smooth.
  10. Stir in cooked mushrooms, chopped chicken, and ham.
  11. Add remaining milk as needed for desired thinner consistency.
