Creamy Vegetable Chowder
Ingredients
- 1 c. zucchini strips or pieces ⓘ
- 1 c. carrot strips or pieces ⓘ
- 1 c. celery strips or pieces ⓘ
- 1/2 c. green onion, chopped ⓘ
- 1 can condensed chicken broth ⓘ
- 1 (7 oz.) can whole kernel corn (with peppers) ⓘ
- 1/4 c. butter ⓘ
- 3/4 tsp. basil ⓘ
- 1/4 tsp. thyme ⓘ
- 3/4 tsp. salt ⓘ
- 1/4 tsp. white pepper ⓘ
- 2 Tbsp. finely chopped parsley ⓘ
- 1 qt. milk ⓘ
Instructions
- Prepare vegetables, cutting zucchini, carrots and celery into small thin strips or pieces.
- Combine with onion and chicken broth in a 3-quart saucepan.
- Bring to boiling, lower heat and simmer just until vegetables are tender, about 10 minutes. Add corn and milk.
- Heat to simmering.
