Creole Black Beans

Ingredients
- 1 lb. smoked sausage, cut into one inch pieces ⓘ
- 3 - 15 oz. cans black beans, drained ⓘ
- 1 1/2 C. chopped onion ⓘ
- 1 1/2 C. chopped celery ⓘ
- 4 cloves garlic, chopped ⓘ
- 2 tsp. leaf thyme ⓘ
- 1 1/2 tsp. white pepper ⓘ
- 1 1/2 tsp. leaf oregano ⓘ
- 1/4 tsp. black pepper ⓘ
- 1/4 tsp. cayenne pepper
- 1 chicken bouillon cube ⓘ
- 5 bay leaves ⓘ
- 1 - 8 oz. can tomato sauce ⓘ
- 1 C. water ⓘ
Instructions
- Combine all ingredients except the sausage in a crock-pot.
- Cover and cook on low for 8 hours or on high for 4 hours.
- Remove bay leaves before serving.
- Serve over cooked rice.
