Ingredients

  • 1 lb. smoked sausage, cut into one inch pieces
  • 3 - 15 oz. cans black beans, drained
  • 1 1/2 C. chopped onion
  • 1 1/2 C. chopped celery
  • 4 cloves garlic, chopped
  • 2 tsp. leaf thyme
  • 1 1/2 tsp. white pepper
  • 1 1/2 tsp. leaf oregano
  • 1/4 tsp. black pepper
  • 1/4 tsp. cayenne pepper
  • 1 chicken bouillon cube
  • 5 bay leaves
  • 1 - 8 oz. can tomato sauce
  • 1 C. water

Instructions

  1. Combine all ingredients except the sausage in a crock-pot.
  2. Cover and cook on low for 8 hours or on high for 4 hours.
  3. Remove bay leaves before serving.
  4. Serve over cooked rice.
