Creole Carrots offer a flavorful blend of tender carrots simmered with onions and seasoned with bouillon and spices, perfect as a side for family dinners or special occasions.

Ingredients

  • 3 cups sliced carrots
  • 1/2 teaspoon salt
  • 1 chicken bouillon cube or 1 teaspoon granules
  • 1 tablespoon margarine
  • 1/2 cup sliced onions
  • 1 tablespoon flour
  • 1/2 teaspoon pepper

Instructions

  1. Place carrots and salt in a saucepan containing about 1 inch of boiling water.
  2. Simmer for 20 minutes or until tender.
  3. Drain, reserving the liquid.
  4. Add hot water to the liquid to make 1 cup.
  5. Dissolve the bouillon cube or granules in the carrot liquid and set aside.
  6. In a separate skillet, melt the margarine and sauté sliced onions until tender.
  7. Sprinkle flour and pepper over the onions and cook, stirring, until slightly thickened.
  8. Add the prepared carrot liquid to the onion mixture and cook until heated through.
