Creole Fish Fillets

Ingredients

  • 1 lb. fish fillet
  • 1 c. diced celery
  • 1 c. chopped onion
  • 1/3 c. butter or margarine
  • 1/2 c. diced green pepper
  • 1 can tomato bisque soup
  • 1/2 c. water
  • 1/2 c. bread crumbs
  • 1/2 c. shredded Cheddar cheese

Instructions

  1. Melt butter and saute celery, onions and peppers.
  2. Mix soup with water.
  3. Add to vegetables.
  4. Stir and heat.
  5. Pour into 9 x 12-inch greased baking pan.
  6. Arrange fillets in sauce.
  7. Sprinkle combined crumbs and cheese over.
  8. Bake at 350° for 20 to 25 minutes.
  9. Serve over rice or noodles.
