Ingredients

  • 1 bell pepper
  • 1 onion
  • 2 Tbsp. vegetable oil
  • 1 can tomato soup
  • 1/4 cup water
  • 1 tsp. vinegar
  • 8 eggs

Instructions

  1. Slice the bell pepper and onion, then sauté in vegetable oil until tender.
  2. Add the tomato soup, water, and vinegar to the sautéed vegetables.
  3. Cook over low heat for about 5 minutes to develop the sauce.
  4. Meanwhile, cook four 2-egg omelettes or scramble all 8 eggs.
  5. Serve the Creole sauce over the cooked eggs.
