Ingredients

  • 1 lb. mushrooms, sliced
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • few sprigs parsley, chopped
  • 1 c. canned tomatoes
  • 1 Tbsp. tomato paste
  • 1/4 c. salad oil
  • 1 Tbsp. butter
  • salt and pepper to taste
  • 1 c. uncooked rice
  • 1 c. water or chicken stock

Instructions

  1. Slice mushrooms into a skillet.
  2. Add onion, green pepper, parsley, canned tomatoes, tomato paste, salad oil, butter, salt, and pepper. Place on low heat.
  3. In about 10 minutes, add the rice and water or chicken stock.
  4. Cook for 20 minutes in all.
  5. Put a lid on the skillet. Add water if the mixture becomes too dry.
  6. All the liquid should be completely absorbed when the rice is tender.
