Ingredients

  • 2 (10 oz.) cans tomatoes with green chiles
  • 1 1/2 cups water
  • 2 tablespoons butter or margarine
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried parsley flakes
  • 1/2 teaspoon dried whole oregano
  • 1/4 teaspoon salt
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped green onions
  • 1 cup uncooked rice

Instructions

  1. Drain the tomatoes, reserving 1 cup of juice.
  2. Combine the reserved juice, water, garlic powder, dried parsley flakes, dried oregano, and salt in a large saucepan.
  3. Bring the mixture to a boil, then add the chopped green pepper, chopped green onions, tomatoes with green chiles, and uncooked rice.
  4. Cover the saucepan, reduce heat to low, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
