Ingredients

  • 1 large green pepper, sliced thin
  • 1 1/2 cups sliced green onions
  • 1 (14 1/2 oz.) can tomatoes
  • 1 (8 oz.) can tomato sauce
  • salt and pepper to taste
  • 1/2 tsp. dried thyme
  • 1 bay leaf
  • dash of hot pepper sauce
  • 1 1/2 lb. flounder fillets

Instructions

  1. Cook green onions and green pepper in a skillet until tender.
  2. Stir in tomatoes, tomato sauce, salt, pepper, thyme, and bay leaf.
  3. Simmer gently for 15 minutes.
  4. Remove bay leaf.
  5. Arrange fish in a shallow baking pan coated with cooking spray.
  6. Spoon sauce over fillets.
  7. Bake at 375°F for 15 minutes or until fish flakes easily with a fork.
  8. Serve with rice.
