Instructions

  1. Soak noodles in warm water for 30 minutes or until softened.
  2. Drain and discard water.
  3. Set noodles aside.
  4. Heat vegetable oil over medium-high heat until hot.
  5. Add garlic and stir-fry for 20 seconds.
  6. Add shrimp and stir-fry for 2 to 3 minutes.
  7. Remove shrimp from the pan and set aside.
  8. Add eggs to the pan, stirring constantly and breaking into small pieces.
  9. Push eggs aside in the pan.
  10. Add drained noodles, vinegar, fish sauce, sugar, and paprika to the pan.
  11. Toss gently over medium heat for about 1 to 2 minutes.
  12. Add scallions, bean sprouts, and cooked shrimp to the pan.
  13. Mix all ingredients together and cook for about 2 minutes.
  14. Transfer noodles onto a large platter.
  15. Sprinkle crushed peanuts over the noodles.
  16. Garnish with coriander sprigs and bean sprouts.
