Ingredients

  • 1/4 cup sliced green onions with tops
  • 1 clove garlic, minced
  • 1 tablespoon butter
  • 2 (12 oz.) cans V-8 juice
  • 1 cup water
  • 1/4 cup raw rice
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried thyme, crushed
  • 1 to 2 bay leaves

Instructions

  1. In a large pot, sauté sliced green onions and minced garlic in butter until fragrant.
  2. Add V-8 juice, water, rice, sugar, salt, dried thyme, and bay leaves to the pot.
  3. Bring to a boil, then reduce heat and simmer until rice is tender, about 20-25 minutes.
  4. Optional: Add canned shrimp and heat through before serving.
