Ingredients

  • 1 1/2 lb. raw shrimp or crawfish, deveined
  • 2 cups washed raw rice
  • 1 stick oleo
  • 1 can Ro-Tel tomatoes
  • 1 can onion soup
  • 1 can cream of mushroom soup
  • 1 bell pepper
  • 1/2 cup parsley, chopped
  • 1/2 cup green onion, chopped

Instructions

  1. Saute onion and bell pepper in oleo.
  2. Add soups, tomatoes, seasoned shrimp or crawfish, and parsley.
  3. Bring to a boil, then add raw rice.
  4. Mix well.
  5. Bake in a 350°F oven, covered, for 1 hour.
  6. Stir with a fork after the first 30 minutes.
  7. Finish baking.
