Ingredients

  • 1 1/2 lb salt meat
  • 1 1/2 lb fresh fish
  • 3 lb spinach
  • 2 crabs or 1 conch
  • 12 okra
  • 1 large onion
  • 1 clove garlic
  • 1 sprig thyme
  • 1 sprig parsley
  • 1 sprig celery
  • 1 small hot pepper

Instructions

  1. Boil salt meat until tender in 3 quarts of water.
  2. Boil fish; remove bones and add to the stock.
  3. Add crabs or conch to the pot.
  4. Put spinach, okra (stems and tips removed), onion, and garlic through a grinder.
  5. Add the ground mixture to the stock and boil rapidly for about 30 minutes.
  6. Add vinegar to prevent the appearance of slime.
  7. Do not skim while boiling.
  8. Serve hot with fungi.
