Ingredients

  • 4 chicken breasts, cooked, deboned and chopped
  • 1 cup mayonnaise
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 2 cans cream of chicken soup (10 3/4 oz.)
  • 1 can sliced water chestnuts (8 oz.)
  • 2 cups cornflakes, crushed
  • 1/4 cup oleo, melted

Instructions

  1. Combine cooked, chopped chicken, mayonnaise, chopped celery, and chopped onion in a mixing bowl.
  2. Add 1 cup of crushed cornflakes, cream of chicken soup, and sliced water chestnuts. Mix well.
  3. Transfer the mixture into a 2-quart casserole dish.
  4. Melt the oleo (margarine or butter).
  5. Add the remaining 1 cup of crushed cornflakes to the melted oleo and mix well.
  6. Sprinkle the cornflake mixture evenly over the casserole as a topping.
  7. Bake at 325°F for 45 minutes until hot and bubbly.
