Ingredients

  • 2 eggs
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 cup yellow cornmeal
  • 1 cup flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt

Instructions

  1. Beat eggs in a mixing bowl.
  2. Add milk, melted butter, and cornmeal to the eggs and mix well.
  3. Sift together flour, sugar, baking powder, and salt.
  4. Add the dry ingredients to the egg mixture and stir just to blend.
  5. Pour the batter into a buttered 9 x 13-inch pan.
  6. Bake at 400°F (200°C) for 20 minutes, until edges are browned.
  7. Cool the baked mixture and cut into diamond-shaped pieces.
  8. Split each piece and spread the cut surfaces with butter.
