Ingredients

  • 1 1/4 lb. white potatoes
  • 1 egg
  • 1 onion
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 cup bread crumbs
  • 2 Tbsp. bacon fat

Instructions

  1. Melt bacon fat in a 12 x 8 x 2-inch pan.
  2. Mix grated potatoes, grated onion, egg, salt, pepper, and bread crumbs until well combined.
  3. Spread the mixture evenly in the bottom of the pan.
  4. Dot the top with additional bacon fat or chopped fried bacon.
  5. Bake for 50 to 60 minutes at 400°F.
  6. Cut into squares and serve.
