- Dissolve yeast in warm water and let stand for 5 minutes.
- Add honey, rosemary (if using), and 1 tablespoon of oil to the yeast mixture.
- Sift in half of the unbleached and whole wheat flours along with the coarse salt (if using), and stir well.
- Knead in the remaining flour until the dough is smooth and elastic.
- Pour 2 tablespoons of oil on a 9 x 13-inch cookie sheet and spread the oil evenly.
- Press the dough into an even layer on the prepared pan.
- Pour the remaining 4 tablespoons of oil over the dough and sprinkle with coarse salt.
- Bake at 400°F (200°C) for 25 minutes until golden brown and crisp.
