Ingredients

  • 7 lb. cucumbers
  • 2 c. lime
  • 2 gal. water
  • 2 qt. vinegar
  • 9 c. sugar
  • 1 Tbsp. celery seed
  • 1 Tbsp. salt
  • 1 Tbsp. whole cloves

Instructions

  1. Place celery seed, salt, and whole cloves in a bag.
  2. Slice medium-sized cucumbers into about 1/4-inch slices.
  3. Cover with a mixture of 2 cups lime and 2 gallons water.
  4. Let stand for 24 hours, stirring occasionally.
  5. Rinse cucumbers well and soak in clear, cold water for 3 hours, then drain.
  6. Bring vinegar, sugar, and spices to a boil.
  7. Let the mixture cool slightly, then pour over the drained cucumbers and let stand overnight.
  8. Next morning, boil the mixture for 40 minutes, simmering after it comes to a boil.
  9. Pack pickles into sterilized jars and pour hot liquid over them, then seal.
